Air Fried Meatballs with Zucchini Noodle Spaghetti

Don't you love when you find ways to make classic dishes healthy? Pasta is one of my all time favorite foods, but it's definitely not so great to eat everyday. Thankfully we have our friend Ked who likes to put healthy twists on classic dishes. Check out his new and improved recipe for spaghetti and meatballs. 

 

Zucchini Noodle Spaghetti

Ingredients 

  • 1 pound of lean ground beef
  • 1/2 pound of Italian sausage 
  • 1/3 cup seasoned bread crumbs
  • 1 egg
  • 1 tablespoon parsley
  • 1 tablespoon oregano 
  • 1 teaspoon Italian seasoning 
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt 
  • 1 teaspoon pepper 
  • 1/2 cup Parmesan cheese
  • 1 tablespoon minced garlic
  • 4 cups marinara sauce 
  • Diced onion
  • Diced bell pepper 
  • 1 tablespoon minced garlic
  • Onion powder 
  • Garlic powder 
  • Seasoning of your choice
  • 1 tablespoon Olive oil
  • 2 tablespoons Butter
  • Italian seasoning 
  • Oregano 
  • 2 packs of zucchini noodles

Instructions:

  1. Combine all ingredients except beef and pork in a medium bowl. Mix well.
  2. Add beef and pork and mix to combine. Divide into 16 meatballs.
  3. Place meatballs in a single layer in the air fryer.
  4. Cook meatballs for 12-14 minutes on 400 degrees or until browned and the center of the meatball reaches 165°F.
  5. Heat olive oil and butter in pot.
  6. Sauté onions and bell peppers.
  7. Add marinara sauce and minced garlic.
  8. Season to taste with seasonings and let simmer.
  9. Steam two packs of fresh zucchini noodles and set aside.
  10. Once everything is done plate zucchini noodles.
  11. Ladle marinara sauce over the noodles and place a few meatballs, and cover with a little more marinara sauce.
  12. Garnish with Parmesan cheese and enjoy!
