Egg Muffin Recipe With Kim

One of my all-time favorite breakfast foods is the Starbucks egg bites. They are so tasty! I am not a cook by any means, but I wanted to give it a shot at home to see if I could make something similar. I found a couple great recipes and gave this one a chance. The end result was amazing!
Here is what you will need:
  • 6 large eggs
  • 10-12 slices pre-cooked bacon
  • ¾ cup shredded Monterey jack cheese
  • ½ cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon Italian seasoning

This recipe is so easy. First, start by spraying the muffin pan with nonstick cooking spray. Preheat your oven to 350 degrees F. 

Cut each slice of bacon into 3 pieces. Put 2-3 pieces in each muffin cup.

To make the egg mixture, mix together all ingredients until well blended, except for 1/4 cup of the cheese. Fill each muffin cup with ¼ cup of the egg mixture. Sprinkle the remaining cheese on top of the mixture.

Once you complete the steps above, they are ready to bake! Bake for 20-25 minutes or until eggs are set.

When they come out of the oven, give them a few minutes to cool down. I was super impressed with how they turned out. They are so fluffy and cheesy and the great thing about them is they are low in calories but high in protein. There are approximately 100 calories in each muffin with 8g of protein, 7g of fat and 1g sugar.

    I made these and put some in the refrigerator popped in the microwave the next morning and had them for breakfast the rest of the week. It’s a good fast on the go healthy breakfast.
