Mahi Mahi in Lemon Garlic Cream Sauce over Mushroom Cauliflower Rice with Peppers

It's that time of the week again! We have another recipe from our friend Ked. This one has a few more steps than his usual, but it's perfect for a date night in. Let us know if you try it and tune in every Sunday at 7pm to our Facebook Live to catch Cooking with Ked!

Ingredients

  • 4 Mahi Mahi fillets 
  • 3 tablespoons flour
  • 1 teaspoon of each: garlic powder, onion powder, paprika, cajun seasoning
  • Olive oil
  • 3 tablespoons diced shallots
  • 3 tablespoons minced garlic
  • 1 1/4 cup of low sodium chicken broth
  • 1/2 cup of heavy whipping cream
  • 1 tablespoon cornstarch
  • 1/2 teaspoon each of dried parsley and dried thyme
  • Salt and pepper to taste
  • Parmesan cheese
  • Fresh Lemon juice
  • Diced bell peppers
  • Diced onions
  • Mushrooms
  • 1 bag of Cauliflower rice
  • Olive oil
  • Minced garlic
  • Salt and pepper to taste
  • Cayenne pepper to taste

Cooking the fish:

  1. Leave Mahi out to get to room temperature for at least 20 to 30 minutes before cooking.
  2. Mix together 3 tablespoons flour 1 teaspoon of garlic powder, onion powder, paprika, cajun seasoning.
  3. Sprinkle evenly and handsomely on both sides of Mahi.
  4. Heat olive oil in skillet on medium to medium heat.
  5. Place Mahi in skillet and cover. Cook four to five minutes per side but don’t overcook. 

Making the sauce:

  1. After cooking the fish leave the drippings.
  2. Sauté shallots in drippings until cooked, add the minced garlic.
  3. Whisk chicken broth and cornstarch together. Add to the skillet along with heavy cream and two tablespoons of lemon juice.
  4. Whisk together and let simmer but don’t burn, adding parsley and thyme to the mix. Season with salt and pepper to your liking.
  5. Let simmer 4 to 5 minutes until it thickens. Turn off heat and add Parmesan cheese to your liking. 

Cooking the rice:

  1. In a skillet add olive oil and minced garlic.
  2. Add bell peppers and onions and sauté all together.
  3. Add mushrooms and cook for one minute.
  4. Add cauliflower rice and seasoning to taste with salt, pepper, and cayenne pepper. 

Plate and rice and place Mahi Mahi over the rice and spoon the sauce over the Mahi Mahi and sprinkle parsley over the top. Enjoy!
