Italian Sausage and Peppers Over Zucchini Pasta

  • 1 package of Italian sausage
  • 1 onion diced
  • 1 red bell pepper diced
  • 1 orange bell pepper diced
  • 1 yellow bell pepper diced
  • Minced garlic
  • Seasoning of choice
  • 1 jar spaghetti sauce (I prefer Rao’s)
  • Zucchini noodles
  • Parmesan cheese
  • Olive oil
  • Garlic powder
  • Onion powder
  • Oregano
  1. Cook sausage in olive oil for 10-12 minutes over medium-high heat (turning over once) and set aside.
  2. Cook peppers and onions in the same pan for 8 minutes.  Add minced garlic and cook for 4 more minutes.
  3. Cook your zucchini noodles and set aside.
  4. Stir the Rao’s Sauce into the pan with the peppers and onions. Slice the sausage into 1/2-inch pieces and add to the pan as well.
  5. Fold zucchini noodles into the mixture and allow to cook for 4 minutes on medium-low.
  6. Season to taste with seasonings listed.
  7. Serve and top with Parmesan cheese as a garnish.
