Bariatric Friendly Thai Inspired Recipe

Cooking after bariatric surgery can be tricky. We can only eat small amounts of food at a time and we must make sure we are getting the correct amount of protein and nutrition in to ensure we stay healthy.

One of the most annoying things after bariatric surgery is having a lot of leftovers and then being stuck eating the same thing for days. Lately I have really been enjoying making single serving meals for myself. It makes it easier for me and ensures that I don’t have to eat the same thing for dinner every single night. Here is one of my favorite recipes to enjoy after weight loss surgery.

Ingredients

  • Diced frozen grilled chicken (4 oz)
  • 1 pack of steamers veggie mix
  • PB2 2 tb
  • Chili sesame oil ½ tb
  • Salt 1/2 tsp
  • Pepper ½ tsp
  • Red curry powder 1 tsp
  • Olive oil ½ tb
  • Dash of water (eye it for desired consistency)

Instructions

Prepare and heat as directed 4 oz of chicken or use pre-cooked grilled chicken, cut in cubes.

Microwave 1 pack of Steamers Veggie Mix (I prefer the broccoli and carrot mix)

Use a small bowl and place all dry ingredients in the bowl (PB2, salt, pepper and red curry powder). Add all the oils (chili sesame oil and olive oil). Stir the dry and wet ingredients together and then add a dash of water, eyeing it for the desired consistency.

Once the sauce is ready, place the veggies and chicken in a bowl and pour the sauce over. Enjoy!
