Bariatric Friendly Dinner & Dessert

If you saw last night's Facebook live you know our friend's Kim and Kedric dropped some really great recipes. We wanted to make sure we had those recipes saved so you can come back and look at them. Check them out below!

 

Dinner: Cauliflower House Fried Rice

1 bag fresh cauliflower rice or frozen
Sesame oil
Seasoning of choice
2 teaspoons minced garlic
1/2 pound shrimp
1 cup diced chicken breast
1 cup steak (you can use fajita style strips sold in stores
2 eggs
1 cup of green peas
1/2 cup carrot sticks
1/4 cup soy sauce
1/3 diced green onions
Cook shrimp, chicken, and steak separately using sesame oil and set aside. Place green peas in skillet and sauté with a little sesame oil, adding carrots, green onions, and minced garlic cooking until softened. Add cauliflower rice to the mixture and cook until rice is done. Add the meat and soy sauce to the mixture cooking three to five minutes. Season to taste with your favorite seasoning. Move mixture to one side and scramble the eggs. Once the eggs are scrambled mix in with the rice.

Dessert: Cheesecake Stuffed Strawberries

12 fresh strawberries
1/8 tsp of vanilla extract
4 Tbsp of fat-free cream cheese, softened
3 tsp Stevia (or any zero calorie sweetener)
1 low-fat graham cracker crushed into crumbs

 

Cut the tops off the strawberries and with a sharp knife cut an X – do not cut through the strawberry. Gently remove a little strawberry from the center.
In a small bowl mix – cream cheese, Stevia and vanilla.
Place mixture into a pastry bag or a plastic bag with the tip cut off and pipe in the filling.
Roll top of strawberries in graham cracker crumbs.
